Abstract
Pretzels are a worldwide favorite snack item. They are salty, crunchy baked hand-held bread. It is a type of baked snack composed primarily of wheat flour and appears in a variety of forms and sizes, but most resemble a twisted knot. On the other hand, Okra is a warm-season vegetable commonly known as gumbo or ladies' fingers. Minerals, vitamins, antioxidants, and fiber are all abundant in it. This study sought to determine significant difference in the level of acceptability of Okra (Abelmoschus esculentus L.) Pretzel in terms of aroma, texture, color, appearance, taste, and general acceptability and when the respondents are grouped according to age and sex using accidental sampling techniques. The experimental design was used in this study. 30 respondents were categorized by age and sex, and they assessed the product's sensory qualities. 25 were male and 5 were females, 8 of whom were categorized as young and 22 were old. Results show that there was no significant difference in terms of the level of acceptability as to sensory attributes and it also implies that the product was very much liked and acceptable for the respondents. However, there is a significant difference in appearance when the respondents were classified according to age and sex. With the data that have been derived from the research, the researchers concluded that Okra Pretzels was acceptable. This only means that the level of acceptability varies in terms of age and sex.
