The result of this study is very essential in adopting the HACCP standard structural design of a plant facility for a more safety meat production and sustainable business model. Progressive Good Manufacturing Practices (GMP) and Standard Sanitation Operating Procedure (SSOP) were considered in this study particularly in dressing plant operation and by-products processes for a healthy and safe poultry product in the market. The processes considered here were in compliance with the National Meat Inspection Service (NMIS) particularly on plant facility, equipment and machinery, Good Manufacturing Practices (GMP) and Standard Sanitation Operating Procedure (SSOP). Complying all these will ensure the consumers that we will be more responsible business and a food processing system that will provide safe food for the people.
This study was conceptualized to determine the feasibility of a dressing plant facility in Panay Island that uses the “AA Accreditation” standard, semi-automatic equipment, dressing plant.
The dressing plant was designed to serve the needs of buyers, distributors, and poultry companies who wish to avail of the systematic and efficient dressing processes for quality dressed chicken.
